I got this recipe from VitaMix and modified it for our allergy issues. If you don’t have a VitaMix blender, you may need to add some mixer/blender time to the recipe (the VitaMix has a very strong motor) and just intensify the speed according to the recipe.

Ingredients:

  • 1 cup (240 ml) water
  • 1/2 cup (113 g) butter, cut into 8 pieces
  • 4 eggs
  • 1 cup (125 g) all-purpose flour (I used a gluten-free blend and it substituted well)
  • 1/4 teaspoon salt
  • 1 tablespoon sugar

Directions:

  1. You basically just dump the first 3 ingredients in and blend (water, butter, eggs).
  2. Then dump the last 3 ingredients in and mix at high speed until it begins to thicken (flour, salt, sugar). It will be a little thinner than cookie dough. It will doughy, not runny.
  3. Drop by heaping tablespoon onto a baking sheet and bake for 35 min.
  4. Cut and fill with your favorite filling after they cool. SUPER EASY!!!
I made mine gluten-free and dairy-free by using GF flour and filling them with a dairy-free whipped cream mix. I’ll have a post for that later.
