Prep time: 20 minutes, plus 7 days of feeding 
Yield: 1  1/4 cup of starter

Ingredients: 

  • 1/2 c All Purpose Gluten Free Flour 
    (I use Namaste Perfect Flour Blend which is a sweet brown rice flower, tapioca starch, brown rice flour, arrowroot powder, sorghum flour, xanthan gum blend that works well as a cup-for-cup substitution – I get it from Costco. If you don’t have a store-bought blend that you like, there is an All Purpose Gluten Free Flour Blend recipe in this link.)

  • 1/2 c water

Directions:
Day 1 : Mix flour and warm water in a glass container and lightly cover. Let it rest overnight.
Day 2 : Mix contents of container well and scrape the sides down. Lightly cover and let it rest overnight.
Day 3 – 4 : Discard half of the starter (or split it to share with a friend) and feed the remaining with 1/2 cup warm water and 1/2 cup GF flour. Mix well and scrape down the sides.Lightly cover and let it rest overnight.
Day 5 -7 : Discard half of the starter and feed the remaining with 1/2 cup COOL water (you will use cool water from now on) and 1/2 cup GF flour. Mix well and scrape down the sides. Lightly cover and let it rest overnight. Repeat this process daily until your starter begins to roughly double in size. Lots of bubbles will indicate that your starter is happy and ready to use. 🙂

Day 8 and Beyond Storage and Maintenance:
If you are going to be using your starter 
It can remain on the counter and you can continue daily feedings. For the best results, make sure your starter is fed within 12 hours of using.

If you’re not going to be using your starter right away 
You can put your starter in the fridge and feed it once every 3 weeks. For maintenance feeding, keep a cup of your starter and add 1/4 cup cool water and 1/4 cup flour. Mix well, cover loosely with a lid and put it back in the fridge. 

When you’re ready to use your refrigerated starter, let it sit at room temperature for 24 hours. Then begin regular feedings for three days before baking. Make sure it’s nice and bubbly before using.

Notes
If you see mold on your starter, toss it and start over.
If your starter seems “off” for any reason, toss it and start over.
